Here in Hood River a few undeniable signs let us know that winter has arrived. The cool east winds begin to blow, Mt. Hood and Mt. Adams get a white blanket of fresh powder, and the snow report for the backcountry regains its trance-like hold. But most of all, we know it’s winter because the Wassail starts flowing once again. And that means friends and family will surely be close behind. Happy Holidays from all of us at Full Sail. Cheers!

Session Black Wins Another Gold
Although just released this summer, our newest edition to the Full Sail family, Session Black has already won three gold medals! The most recent gold was awarded in November at the World Beer Championships. In September, at the Great American Beer Festival, Session Black won its second gold medal in the American dark lager category. And its first gold medal came from the Colorado State Fair this summer. Session Black was also named “One of America’s Best Beers” by Men’s Journal Magazine.

LTD 01 - Live the Dream
Our easy-drinking albeit way tasty LTD Recipe 01 is rocking the fermentation tank as this very moment. We predict LTD 01 will be hitting the shelves in early January, maybe sooner.
LTD 01 is part of our seasonal line that emphasizes our brand mantra - both the world class quality of our beers (LTD – Limited Edition) and our celebration of independence (LTD – Live the Dream). We dedicate LTD to everyone who's living the dream, whatever that dream might be. Our dream was to start our own brewery, run it our own way, and do it in an unreal place where all summer the wind pumps and all winter the snow dumps. If you're living your own dream, then cheers to you!
Since its initial release, LTD 01 has racked up three gold medals from the World Beer Championships and received an “A” rating from Beer Advocate Magazine. If you haven't already tried it, it's a wonderfully balanced medium-bodied, copper colored lager with subtle hop accents and a caramel aroma that goes down smooth - perfect for the winter season.
You can pick up a sixer at your favorite beer store or get it on tap at your local pub until spring when we will follow up with LTD 02, and LTD 03 will be back this summer.

Slipknot Imperial IPA Leads the Way
We will kick off our 2010 Brewmaster Reserve line up with delightfully hoppy Slipknot Imperial IPA. This annual favorite and World Beer Championship gold medal winner will be available January to mid March. As the name implies, every aspect of this American style IPA is amplified - from the up-front hop aroma and bitterness to the big malt body. ABV:7.8% IBUs:80
Slipknot is part of our rotating selection of Brewmaster Reserve Beers. Every ten weeks we come out with a different beer that show cases the brewer’s art. We began the program back in 1998 as a way of celebrating our independence and creativity.
Slipknot will be available in 22oz bottles and on draught in specialty beer stores and pubs throughout the Pacific Northwest. In March, we will follow-up Slipknot with Full Sail Imperial Stout and Top Sail Bourbon Imperial Porter. New beers in our 2010 Brewmaster Reserve line-up include Hop Pursuit Extra Pale, due out in Mid-March, Spotless IPA, due out in June, and Sanctuary Dubbel, due out in August.

Meet "Cölesch" Our Newest Brewer's Share Beer
We are super proud to announce the newest beer in our continuing series of Brewer’s Share beers. “Cölesch,” a Kölsch style beer was developed and brewed by brewer, Cole Hackbarth. Cole was inspired to brew an easy drinking, light, dry beer as an alternative to the big malt and high hop styles that tend to be brewed this time of year. To put a distinct American spin on this traditional German style, Cole used the new and hard to find Citra hop variety. He single hopped with the Citra for bittering and aroma, and then used a Citra dry-hop during fermentation to add even more hop flavor and aroma. The malt bill includes German Vienna malt and wheat in addition to the pale malt. Both an ale and lager yeast strains were used during a cooler than normal fermentation. ABV 5.6% IBU 41
Our Brewer’s Share series is a line up of small batch draft beers where each of our brewers takes a turn hand-crafting a single batch recipe of their choosing. Brewer’s Share beers are exclusively available on tap at our Tasting Room and Pub here in Hood River, Oregon, and Full Sail at Riverplace, in Portland, Oregon. Growlers to go are also available. The next Brewer’s Share will be crafted by Collin Godkin and is expected in late January.

Full Sail December Brewmaster Dinner
Our Brewmaster and Chef have been hard at work creating and tasting menus for the best seasonal pairings of food and beer we can find. The special menus are available just once a month on the second Thursday of each month in our pub. The next dinner will be December 10th.
The four course menu will feature four different pairings of local, seasonal food and our award winning brews chosen to complement or contrast each course. Our menus highlight why beer and food are a sublime match. Just order the Brewmaster’s menu and our pub staff will serve up our current celebration of food and beer while you sit back, take in the view, and enjoy. Each menu will feature comments by the Brewmaster and Chef on the pairings.
The cost of the dinner including beer is only $25 per person. The menu will be served the second Thursday of each month from 5:00PM to 8:00PM in a self-guided format. No reservations are needed. The regular menu will also be available. Quantities are limited. The Brewmaster Dinner menus will be posted on our website approximately two weeks prior to the event.
Our Tasting Room and Pub is open daily @ 11:30AM serving lunch and dinner. Brewery tours are available daily, free of charge at 1:00, 2:00, 3:00 and 4:00 PM. For more information about the dinners call the Full Sail Tasting Room and Pub at 541-386-2247.

Innovation in Sustainability Award from the Portland Business Journal
Last month the Portland Business Journal honored us with an award for our Innovation in Sustainability. The PBJ cited our responsible water usage and conservation, renewal energy use and conservation, support for waste reduction, reuse and recycling, and use of local ingredients. We are honored once again to be recognized for our responsible practices in a state that is known for being on the forefront of environmental responsibility. Because we employees are the owners at Full Sail – and because Oregon is our home –we feel empowered to run our brewery in the most responsible manner every day, as much as we are committed to brewing great beers.
Earlier this year, we were named one of the “100 Best Green Companies to Work for in Oregon” by Oregon Business magazine and the State of Oregon recognized our brewery with a Sustainable Tourism award. Last year, we received the Businesses for an Environmentally Sustainable Tomorrow Award (BEST) from the City of Portland Office of Sustainable Development and the Governor’s Award for Sustainability from the State of Oregon.
